  • 3 cups cooked rice
  • 1.25 lb boneless skinless chicken breasts, diced into 1/2-inch pieces
  • 1 Tbsp olive oil
  • 1/2 red onion finely diced
  • 1 1/2 cups of frozen peas, carrots, corn, green bean blend
  • 2 cloves garlic, minced
  • 3 large eggs
  • 3 Tbsp low-sodium soy sauce
  • Salt and freshly ground black pepper
  • Green onion, sesame seeds, and sriracha for garnish (optional)

Instructions

  1. Heat oil in a large skillet. Season chicken with salt and pepper.
