Ingredients

  • 1 tbsp olive oil
  • 4 garlic cloves
  • 1 yellow onion
  • 1 red bell pepper
  • 1 lb ground beef
  • 1 14 oz can diced tomatoes
  • 1 14 oz can tomato sauce
  • 1 14 oz can red kidney beans
  • 2 ½ cups chicken or beef broth
  • 1 cup elbow macaroni pasta
Spices
  • 1 tsp chili powder
  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
Toppings
  • Shredded Mexican cheese or cheddar cheese
  • Sour Cream
  • Cholula Hot Sauce
  • Green onions

Instructions

  1. Heat oil over medium-high heat. Add onion and red pepper. Allow to cook for about 5 minutes until onions are translucent and peppers are soft.
  2. Add garlic and stir until fragrant for about 30 seconds.
  3. Add ground beef and break it up as it cooks.
  4. Once ground beef is brown, stir in canned tomatoes, tomato sauce, kidney beans, broth and spices.
  5. Bring to a simmer and stir in elbow macaroni. Continue stirring for about 2 minutes to prevent the pasta from sticking to the bottom.
  6. Turn the temperature to medium and cover for about 12 minutes or until the pasta is al dente.
